Raisin Cookies



Sweet cookies but not too messy. You would love to serve them to your toddler!


What you need (20 cookies):

  • 100g unsalted butter

  • 100g golden caster sugar

  • 1 large egg

  • 175g plain flour sifted

  • 50g ground almonds

  • 1tsp ground mixed spice

  • 75g of raisins

In a bowl, beat the butter and sugar until fluffy. Add the egg and beat well.

Add the flour, ground almonds, mixed spice and currants and mix to a firm dough. Cover and chill for 15 – 20mn

Preheat the oven to 180 degrees. Grease a baking tray. Roll out the dough to 3 – 4mm thick. Use a 5cm biscuit cutter to cut out rounds and place on a tray.

Brush the biscuit with a little melted butter and sprinkle with sugar. Bake in the oven for 8 – 10mn, until lightly golden. Cool on a wire rack.
