Prepare this colourful, delicious and healthy salad and enjoy it at dinner with your kids.
To prepare a salad for 4 to 6 persons you will need:
2 ½ cups of fresh corn kernels
1 ½ cups of diced avocado
1 pint of quartered cherry tomatoes
½ cup of finely diced red onion
¼ cup of chopped cilantro
¼ teaspoon of salt
¼ teaspoon of freshly ground pepper
1 tablespoon of fresh lime juice
2 tablespoons of olive oil
In a large bowl, mix olive oil, lime juice, cilantro, salt and pepper. Add corn, avocado, tomatoes, and onion. Mix all together.
You can serve it as a salad or as a chunky dip and scoop it up with tortilla chips!
