Perfect Summer Recipe for Gestational Diabetes: Gazpacho



Gazpacho is the perfect summer meal for pregnant women who suffer from gestational diabetes. Each one-cup serving of gazpacho provides only 100 calories, 15 grams of carbohydrate, 3 grams of fibre, 3 grams of protein, and 3 grams of fat.


To prepare the gazpacho you will need:

  • 1 small peeled cucumber without seeds

  • ½ medium green bell pepper without seeds

  • 2 chopped scallions

  • 1 clove of minced garlic

  • 2 tablespoons of red wine vinegar

  • 1 tablespoon of olive oil

  • The juice and zest from one lime

  • 4 cups of chopped tomato

  • 1 cup of low sodium tomato juice

  • ¼ teaspoon of black pepper

  • 1 dash of hot sauce

Blend the cucumber and the bell pepper in a food processor. Add the rest of the ingredients and blend them until they become smooth. Chill it for at least 2 hours before serving. Enjoy your cold gazpacho.
