Nice homemade cookies to be placed in your kid's lunchbox!
What you need (20 portions):
250g flour
120g caster sugar
150g butter
Lemon zest
2 Tbsp milk
Mix together flour, sugar, lemon zest and butter. Rub well the mixture until it turns like breadcrumbs.
Add the milk and mix very well until the dough becomes like a ball.
Roll it on a hard surface to 3mm thick and cut it into shapes.
Put the dough in the oven at 180 degrees for 8mn. Keep it aside to cool.
Spread jam into one cookie surface and stick another one on top.
Sprinkle the icing sugar on top
A nice sandwich cookie to enjoy during a break at school!
