Chicken Noodle Soup

On these cold winter days, prepare for your children for lunch or dinner this delicious chicken noodles soup. It is very easy to prepare and your kids will love it.

You need:

  • 1 tbsp of olive oil

  • 1 tbsp of butter

  • 1 cup of peeled and sliced carrots

  • 3 stalks of sliced celery

  • 1 medium diced onion

  • 1 cup of sliced mushrooms

  • 2 quarts of chicken broth

  • 3 cups of uncooked noodles

  • 3 cups of chicken meat, cooked and chopped into bite-size bits

  • A handful of chopped parsley

  • A pinch of salt and pepper

In a large stockpot, melt butter with olive oil over medium-low heat. Add carrots, celery, onion, mushrooms and a pinch of salt and pepper, and cook until veggies are tender about 10 minutes. Add broth, turn heat to high and bring to a boil. Add noodles and cook for approximately 9 minutes, until noodles are tender. Reduce heat to a gentle simmer, stir in chicken and parsley and cook for 5 more minutes.
