Blueberry Buttermilk Pancakes



These are really popular with kids.


What you need (7 kids portions):

  • 15g unsalted butter

  • 1 medium egg

  • 284ml buttermilk

  • 2 drops vanilla extract

  • 125g plain flour

  • 1tsp bicarbonate of soda

  • 100g dried pears, finely chopped

  • 150g blueberries

  • 2tsp vegetable oil

Melt the butter in a small pan. In a mixing bowl, whisk together the egg, buttermilk, vanilla extract and melted butter.

Sift the flour and bicarbonate of soda into a separate bowl, add the egg mixture and mix together.

Stir in dried pears and blueberries

Heat 1tsp oil in a pan. Spoon 1 -2 tbsp of batter for each pancake into the pan. Cook for 2 – 3mn, then flip over and cook until the pancakes are lightly browned.


Try serving them with powder sugar or maple syrup!
